I love dinnertime! I also love creating healthy and easy dinner ideas to share. Dinners are a meal I have always looked forward to. When the kids were younger and still lived at home, dinner was the one meal we always ate together. We would sit down, talk about our day, share news, talk about current events or things we were planning. Now that we are completely empty nesters, things haven’t really changed all that much. It is still a meal that we sit down at, only now, the “we” is just my husband and I. We still talk about our day, talk current events, plan camping trips or hikes. Most of all, it’s a time to enjoy a good meal and each other.
Healthy and Easy Dinner Ideas
Healthy and easy dinners that fuel the body are important. I love cooking dinner but don’t always have hours to prepare a meal. If you follow The Healthy Campers on Instagram, Facebook or this blog, you know we strive to eat healthy. You have heard the saying, “you are what you eat” and I believe that to the fullest. Your health is going to reflect an unhealthy diet that consists of “filler foods” as I like to call them. Filler Foods are unhealthy foods that are high in junk carbs, sodium, saturated fats, sugars and processed foods. You will most likely feel better and experience better health if your diet consists of healthy lean protein, a variety of high fiber fruits and vegetables, healthy carbs, low sodium/saturated fats/sugar and avoid processed foods as much as possible.
Dinners for us almost always consist of a healthy, lean protein poultry or fish of turkey (ground or sliced), chicken (shredded or diced) or salmon. For a vegetable, we eat A LOT of spinach, brussels sprouts, broccoli, tomatoes, carrots, celery, zucchini, beets and celery. Occasionally have a healthy carb with dinner such as a potato or healthy pasta. Our go-to pasta is Barilla Protein + which offers a variety of pasta made with 100% plant protein.
